En vooral: ze heeft nog nooit zo graag goed uitgewerkte concepten omarmd.<\/strong><\/p><p>De voorbije maanden openden verschillende nieuwe adressen hun deuren in alle hoeken van ons gewest. Sommige doen oude buurtinstellingen heropleven, andere spelen in op grote internationale trends. Maar ze vertellen allemaal iets over de evolutie van de Brusselse horeca: ambitieuzer, meer uitgesproken in identiteit en minder voorzichtig dan een paar jaar geleden.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-ac0064f titre_4_c1 elementor-widget elementor-widget-heading\" data-id=\"ac0064f\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-default\">Le Shake<b> : de Parijse brasserie in Woluwese versie<\/b><\/h2>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-b494c9a link_color1 elementor-widget elementor-widget-text-editor\" data-id=\"b494c9a\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Sommige adressen veranderen van naam zonder echt te veranderen. Andere grijpen een nieuw begin aan om hun identiteit volledig te herdefini\u00ebren. In Sint-Pieters-Woluwe behoort Le Shake duidelijk tot de tweede categorie. De vaste klanten van de buurt kenden het etablissement al onder de naam Shake Hands. Een historisch adres dat in 1998 werd overgenomen door de vader van Jonathan, die er praktisch opgroeide voor hij vandaag zelf het roer overneemt samen met zijn vrouw Liora. Een verhaal van familiale overdracht.<\/p><p><strong>Het resultaat?<\/strong> Een adres dat richting de grote Parijse brasseries kijkt zonder in pastiche te vervallen. Donker hout, messing, een ruime wijnkelder, een centrale bar en een groot, zonnig terras bepalen het decor.<\/p><p>Op het bord dezelfde logica. Escargots de Bourgogne, mergpijp, kalfsnieren, handgesneden tartaar of vol-au-vent met kalfszwezerik dragen het brasserieerfgoed voluit uit. Vanille, chocolade, aardbei\u2026 Einde verhaal. Dat tijdperk is nu voorbij met Coudboul. Gevestigd op het Vossenplein, in de Marollen, trekt het adres al een klein publiek van liefhebbers dankzij een aanpak die meer leent van de gastronomie dan van de traditionele ijsmakerij: tomaat-bonenkruid, koffie-mandarijn, mispel-salie, bergamot of mascarpone-gochujang\u2026<\/p><p>De smaken evolueren voortdurend volgens inspiraties en beschikbare producten. Het andere goede idee van het huis is om klanten zelf hun affogato te laten samenstellen. Vandaag opent het merk in de Baillistraat zijn meest ambitieuze adres tot nu toe, en waarschijnlijk het meest veelzeggende over zijn succes. Achter het project staat Filip Kuzminski, 27 jaar, die een eenvoudige intu\u00eftie had: terwijl de Koreaanse cultuur in Belgi\u00eb explodeerde via series, muziek en sociale media, bleef het food-aanbod nog beperkt. In plaats van een eindeloze kaart aan te bieden, bouwde Seoul South Station zich op rond \u00e9\u00e9n enkel product: de Korean fried chicken.<\/p><p>De nieuwe flagship drijft de ervaring verder met een decor ge\u00efnspireerd op de straten van Seoel: neons, arcadekasten, automaten, stickers en een uitgesproken urbane esthetiek.<\/p><p>Op de kaart blijft de gebakken kip de ster, vergezeld van burgers, bowls, kimchi, pickles en nu ook tteokbokki, die beroemde rijstcakes die alomtegenwoordig zijn in de Koreaanse streetfood.<\/p><p>Het adres markeert ook de lancering van een huisbier, ontwikkeld samen met de Brusselse brouwerij Tipsy Tribe.<\/p><p><strong>Waar?<\/strong> Baillistraat 104, 1050 Elsene<\/p><p><strong><a href=\"https:\/\/www.seoulsouthstation.be\/\" target=\"_blank\" rel=\"noopener\">Seoul South Station<\/a><\/strong><\/p><blockquote class=\"instagram-media\" style=\"background: #FFF; In de Ch\u00e2telainwijk draagt Le Gu\u00e9pard die ambitie openlijk uit. Achter het project staan drie namen die goed bekend zijn in de Brusselse horeca: L\u00e9opold van der Gracht, Tanguy Soille en Charles Levie, al eerder de drijvende kracht achter Caf\u00e9 des Minimes, Caf\u00e9 Circus, Cheval Marin en Chez Jacky.<\/p><p>Hun idee is eenvoudig: een plek recre\u00ebren waar je evengoed terechtkan voor een ei mayonaise als voor een ham op het been, een glas aan de bar of een lang middagmaal op het terras. In de keuken tekent Alexandre Cardoso, voormalig van Caves d&#8217;Alex, voor een kaart die de grote klassiekers van het genre voluit omarmt. Prei vinaigrette, kroketten, mergpijp, terrines, vol-au-vent, carbonnade, blanquette, nieren of kalfszwezerik vormen een compositie die ruikt naar witte tafelkleden en gerechten die lang sudderen.<\/p><p>Met meer dan 180 plaatsen tussen de zaal en het terras, een van de zonnigste van de buurt, speelt Le Gu\u00e9pard de kaart van het grote volkse etablissement. Een gok die op een interessant moment komt.
